0.1. General findings
The collection contains detailed information on noodle production, formulations and costs, new-product testing, customers, procurement, contract manufacturing, internal audits, financial performance, personal data, and business software. Interrelated records identify product composition, ingredient suppliers, production conditions, defects, corrective actions, production volumes, and customers.
The most important recent events concern 2023-2026. They include the recall caused by an incorrect year in the best-before date on gift wrapping, recurring packing errors, longitudinal cracking during drying, surface defects in soba made by a contractor, order and shipment errors, and shortcomings in contracts and price agreements. Some specific corrective actions were implemented, while other document sequences still contain plans or unresolved issues. The status of each event is stated as of the date of its source.
The 2026 recall remained open as of the meeting on 23 July 2026. As of 23 July, the return rate was estimated at approximately 40%, and the records referred to monitoring through the incorrectly stated date in August 2027. The contractor reported that retraining had been conducted, and Kissei Shoji acknowledged shortcomings in its own checks. The document sequence does not establish final completion of the recall or the overall effectiveness of all the new procedures.
The financial materials show growth in internal annual results for FY2024-FY2025, but also contain individual loss-making months, loss-making products, working budget drafts, and formula errors. These four types of information are distinguished. The tables also contain a JPY 3,292,075 discrepancy in an order table and an inverted year-on-year comparison formula displaying 90.73% instead of the actual ratio of 110.22%. These findings concern calculations within the files; a financial loss of the corresponding amount has not been established.
Personal data appear in personnel, medical, insurance, lending, customer, and ordinary business workbooks, including hidden worksheets. Some files contain populated password and access fields. Row counts, different years, copies of employee lists, and duplicate views cannot be added together and treated as a headcount.
Source paths follow the relevant descriptions.

1. General findings
The inventory under E:\kissei counts folder "1" and 25 employee folders, totaling 278,326 files and 323.58 GB. It includes production, finance, management, personnel, contracts, logistics, and IT materials. Folder "1" - E:\kissei\1 - is approximately 108.42 GB, with 70,421 files and 13,206 subdirectories. It contains 31,045 distinct file contents; the remainder are duplicate versions or copies. The 25 employee folders contain 207,905 files totaling 215.16 GB.
Kissei Shoji's production materials include information on the Takushian Noodle Workshop, formulations, production instructions, raw-material standards, process conditions, costs, supplier data, tests, product improvements, production plans, actual production records, quality, HACCP/JFS-B, packaging, and contractors. Some document sequences allow a product to be followed from the initial concept through laboratory prototypes, line trials, initial production, and commercial launch.
Development materials include completed tests, formulation changes, and private-label (PB) product plans for LK ramen, LK matcha udon, soba, hiyamugi, and Catering udon. For Haneda, the partner's original formulation and plans to adapt it are retained; several other products have internal communications about line trials and initial production. The involvement of Kissei Shoji, customers, and manufacturing partners is assessed individually for each project. The documents do not justify attributing all technologies in the collection to Kissei Shoji.
The production records link the reformulation of LK ramen to a significant quality defect. A July 2024 report states that the entire February production referred to in that report was discarded because of poor texture. In the May development table, the author assessed the risk of recurrence with the previous formulation as high. Later documents support line trials of the revised formulation, favorable observations, and the first production of the revised version on 26 September 2024. This is a production defect with documented corrective work, not a confirmed chemical or microbiological hazard.

A detailed sequence of technical documents concerns drying stability. Following replacement of dehumidifier A-1, an internal report dated 3 March 2025 records longitudinal cracking and an occasion when all products were removed from the room to deal with defective output. The same report describes completed trials using the air conditioner's Dry mode and proposed further changes to sensors, ducts, and filters. Winter operating conditions remained under development after a favorable assessment of experimental dehumidification control in April 2025 and an improvement report in July. A January 2026 summary reports frequent cracking again over the preceding three months; a July document states that the drying procedure for line A only began to stabilize in June. Intermediate improvements are therefore not presented as a lasting resolution of the problem.

Internal production reports document rejection of a Genta soba lot because of a drying error, various faults in mixer A, and damage to the automatic cutter blade on 13 March 2026. Later maintenance records, however, report that the line A water-supply tank was repaired on 11-12 February 2026. The January repair plan is therefore no longer the latest record of that work. Repairing the tank does not, however, resolve every mixer symptom or the separate blade-damage incident in March.

Contractor Kirishina's materials on Takushian Sarashina Soba examine 23 returned bags, including two with black marks. The author links the defects to residues from rollers, scrapers, and the cutting assembly. Installation of collectors on three of five machines and the move to scheduled dismantling and cleaning are documented as completed in November 2025 and January 2026. In the April version, work on the remaining two machines and subsequent improvements was still outstanding. The composition of the black marks and the results following the planned work have not been established.

The 2024-2025 document sequence records a recurrence of short udon being packed in bags intended for short Chinese-style noodles. Following the report of 18 October 2024, the April 2025 materials acknowledge the need for inspection of every item and the failure to carry out two-person checks. The recurrence is placed before the corrective measures were introduced, not after all measures had been implemented. The July summary reports zero complaints in the relevant category for a limited period, but does not establish sustained resolution across all lots through September 2026.

In August 2025, a recipient reported that ST-10 had no best-before date sticker; the records describe an exchange with a return on 12 August. Individual records from late 2025 expressly state that shipments were processed without instructions, including a shipment on 12 December. January 2026 documents report both the introduction of some automation and continuing order-entry problems; process improvements continued in March-April. These are documented labeling and document-processing failures, but they do not prove that all checks were absent or establish a common cause with the 2026 recall.

Food-safety records include a customer complaint dated 5 October 2022 about a washer in 信州乱切りそば200, along with reports of insects, plant fragments, and other noodles. A separate July 2022 summary reports a metal fragment detected by a metal detector and identified by an external investigation as chromium-plated iron. These are separate pieces of evidence: the reported washer is not equated with the detected fragment. Detection during a control check is also not presented as proof that the foreign material reached a purchaser.
Internal documents also describe disposal of all short udon in a drying room after a fan broke on 11 October 2022, and defects caused by dirt or foreign material in 2023-2024. A signed request dated 23 August 2024 expressly states that condensate sometimes dripped from ductwork onto products during drying and cutting; expenditure was approved on 27 August. The subsequent September report already lists work to address condensation among the maintenance items. This continues the record after expenditure approval, but is neither a separate completion certificate nor a test result showing that dripping had ceased. The composition of the water and the disposition of affected lots have not been established.

Specific maintenance work documented for 2024-2026 includes replacement of dehumidifier B-4, components of the X-ray unit on packing machine No. 2, and cutter A, together with metal-detection checks and training. Some measures were implemented later than planned. A boiler-inspection entry in the 2025/26 worksheet remains marked "not performed", but the inspection type, deadline, and date of the status update are not identified. This entry is therefore not treated as evidence that a defective boiler was being used in September 2026.

An external inspection on 25 September 2024 recorded two risk conditions: according to an employee's explanation, tools could be left temporarily near the mixer because there was no specific rule, and warehouse racks were neither anchored nor connected. Management discussed the inspection recommendations in January 2025, but that discussion concerned a separate item, a lifting platform. The document sequence does not establish specific closure of the tool-storage and warehouse risks. Separately, for the additive-labeling errors identified in 2023, approval of artwork for seven products and updates to the specification mas
